Baked Egg Bacon Cups

Calories- 300

Ingredients- Bacon Slices 2, Eggs Medium 2, Cheddar 10g, Fry Light, Cumin Dry pinch, Salt pinch, Pepper pinch

Recipe Guide-

Begin by preheating the oven to 200 degrees. Grease 2 compartments of a muffin tin with olive oil. Wrap a piece of bacon into the muffin tin. Cut off the excess bacon. Use the extra bit of bacon for the bottom of the cup. You basically want a neat cup of bacon with no gaps. Line the other muffin tin in the same way.

Place the muffin tin in the preheated oven and precook the bacon for 6 minutes. When the bacon is just beginning to crisp up, remove from the oven. Separate the egg whites from the egg yolks, and then put an egg yolk in each of the bacon cups and top with the egg white. It’s likely that you won’t need all the egg white.

Once the eggs are in the bacon to them with the cheddar and then place the muffin tin back in the oven and cook for 10 minutes, or until the eggs are firm. Season with salt, cumin and pepper and serve.
