Savoy cabbage stuffed with chicken recipe
Ingredients- Couscous 35g cooked to pack instructions, Tarragon Dried 1tsp, Apricots 25g chopped, Pumpkin Seeds 12g, Savoy Cabbage 150g 5 outer leaves, Skinless Chicken Breasts 100g cut into 1cm (¼ in) strips, Apple Juice 75mls
Prep time- 10 mins
Cook time- 20 mins
Mix the couscous, tarragon, apricots and seeds, then season and cover. Heat a pan of water and boil the chicken for 10 minutes.
Meanwhile in a separate pan boil the cabbage for 5 minutes, then rinse in cold water. Reserve the 2 largest leaves, and spread out 2 more. Finely shred the remaining leaf and mix with the couscous.
Place the couscous on 2 leaves, laying strips of chicken over the centre and wrap into a parcel. Place each parcel onto a large leaf, seam side down, and fold into a bundle. Cook with the cider in a covered pan for 12 minutes. To serve, remove the outer leaf
